Blackened Chicken Avocado Power Bowls

Ingredients 

Blackened chicken

  • 1 tablespoon Chili Powder
  • 2 teaspoons  paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 pounds boneless skinless chicken breasts thinly sliced
  • 2 tablespoons olive oil

Power bowls

  • 2 cups broccoli florets
  • 1 sliced red bell pepper
  • 1 sliced yellow bell pepper
  • 1 (15-ounce) can chickpeas
  • 2 tablespoons olive oil
  • 1 cup chopped red cabbage
  • 1 chopped avocado

Instructions 

To prepare the blackened chicken

1. In a small bowl add 1 tablespoon  Chili Powder, 2 teaspoons  paprika, 1 teaspoon onion powder, 1 teaspoon cumin, ½ teaspoon garlic powder, 1 teaspoon Italian Seasoning, 1 teaspoon salt and ¼ teaspoon pepper. Rub the spice rub evenly on the front and back of 2 pounds boneless skinless chicken breasts.

2. In a medium-sized skillet over medium-high heat add 2 tablespoons olive oil. Add the chicken and cook on each side about 2-3 minutes or until cooked through to 165 degrees Fahrenheit.

To prepare the power bowls

1. Preheat oven to 425 degrees Fahrenheit. On a baking sheet add 2 cups broccoli florets,1 sliced red bell pepper, 1 sliced yellow bell pepper and 1 (15-ounce) can chickpeas. Salt and pepper and drizzle with 2 tablespoons olive oil . Roast for 15 minutes or until tender.

2. To assemble divide the chicken evenly with the broccoli, peppers, chickpeas, 1 cup chopped red cabbage, and 1 chopped avocado.
